Hello my darlings,
Ahhh so sorry this post is so late but last night I decided to make my honey his favorite red thai curry chicken (new recipe and oohhhh so good), we had vino and caught up with Top Chef. It was nice to chat and sip wine, since his insane schedule/commute doesn't allow many work-less evenings at a reasonable time, we take those chances when they come. And realizing I just can't do it all is something I am ok with.
Now onto to this dish.
I absolutely love taking my loved ones favorite dishes, lightening them up and making them my own tribute to them. If your in my address book and love food as much as me, there is a big chance I have sent you a picture of a finished dish, captioned with omg this {whatever) reminded me of you or I made this thinking of you... It's true... Some would call it almost a bribe for people to come visit...
For this week's dish, I thought I'd come up with a perfect Superbowl app that my bestie would love. To be honest it's not a dish I have ever been able to get behind, something about the mayo and mushiness that totally turns me off. But subsitute the (let's be honest) fatty mayo, add a little crumbled turkey bacon (for crunch) and a kick of sriracha and guys, I am ON BOARD.
Ingredients
6 large hard boiled eggs
1 large avocado
3 tsp lime juice
1/2 tbsp Sriracha
1 tsp fresh minced cilantro
2 tbsp minced red onion
2 strips turkey bacon, cooked and chopped ( I cook in the oven at 400 for 15 minutes, flip once)
dash of sweet paprika or chili powder
Pinch of salt and pepper
Recipe
Halve the eggs length-wise, CAREFULLY remove the yolks and set aside.
Arrange the egg white halves and set aside
With a fork mash the avocado and 4 of the egg yolks in a bowl until completely mixed/desired consistency.
Add lime juice, red onion, cilantro, paprika, salt & pepper
Taste and add salt or pepper per your taste (I did about a tsp of each)
Add Sriracha, paprika and crumbled bacon.
Mix completely.
Spoon about a tbsp into each egg white half
Totally skip Sriracha if your not into the kick part of this recipe or top it woth a drop if your like me and Sriracha can do no wrong and a little cilantro leaf will also help with the prettiness and pairs nicely with the spice.
That is it. Super easy peasy and most steps can be done ahead (like boiling the eggs and making bacon. I'd wait to put them together until right before you serve them.
